Three ways with fish fillets

Salmon sandwiches

Serves 4

Move over fish fingers! Here’s a new take on the family favourite.

You will need:

✽ 4 fillets salmon, skinned

✽ Juice of 1 lemon

✽ 4tbsp breadcrumbs

✽ 1 ciabatta loaf, sliced lengthways then cut into 4

✽ 1 cucumber, peeled, deseeded and peeled into ribbons

✽ mustard and cress

FOR THE TARTAR SAUCE

✽ 200ml mayonnaise

✽ 3tbsp capers, drained and chopped

✽ 3tbsp gherkins, drained and chopped

✽ 1 small shallot, finely chopped

✽ Squeeze of lemon juice

✽ 3tbsp chopped fresh parsley

How to do it:

1 Heat the oven to 200C/Gas 6.

2 Mix together all the tartar sauce ingredients, season well and set aside.

3 Put the salmon onto a tray lined with oiled foil. Squeeze over the lemon juice, sprinkle over the breadcrumbs, coating the sides. Place in the oven for 15 mins.

4 Divide the tartar sauce between the sandwich bases. Top with a piece of salmon, and add the cucumber and cress, then your bread lid.
