SAFIYA SALIM AL HABSI &nbsp;How did Slice Oman come into being? &nbsp;&ldquo;Slice Bakery started as a home business in 2014. It was known as Slice at the time and it was just me running the show at that time. I started by baking mostly American style bakery treats but from scratch. I enjoyed the process of preparing everything and planning the next recipe I was going to try next. With lots of encouragement from family, friends and work colleagues I decided to start selling the baked goodies. In the summer of 2015, I started experimenting yeast dough recipes I wanted to be able to bake my own sandwich bread, doughnuts and breakfast treats. I baked and made sure family and friends got to taste and listened to their feedback and altered a few products to suit the general taste. &ldquo;Then in early 2016, I booked Slice a tent in Souq Es Sebt and planned a small menu of my best sellers at the time; banana bread, pecan buns, yeasted doughnuts, Almond Slice (bostock), brioche chocolate belts, raisin buns, cookies, no sugar pumpkin bread and occasionally I would make tomato soup and focaccia rolls to pack for customers who bought the soup. The experience was hectic yet very rewarding, at the time I was a full time bank employee, I enjoyed my job but my passion for baking and the support of my family and friends encouraged me to start a business plan. I sat down with my husband and business partner and started noting down my vision of how the kitchen, front shop area, display and bakery operation would run. We discussed our menu, ingredients, and packaging and started seeking advice from friends whom are experienced in the F&amp;B industry and the support has been really good. It was important for us to set up a bakery that wasn&rsquo;t limited to a certain group of people in terms of price, using premium ingredients to make our baked cakes and pastries and offer the best service quality to our customers all the time. &ldquo;The plan started seeing the light of day in October last year during that time there was a lot of work to be done on our budding business side so I resigned from my full-time job and saw the business through all different stages from commercial registration, to booking a spot for my bakery, finalising floor plans for the bakery, choosing the right equipment for my kitchen, making the decor of the front shop unique and inviting to finally recruiting and opening the bakery. &ldquo;We opened our door this year in Al Khoud during Ramadan (to be more precise May 30th 2017).It was rewarding and exhausting to be on my feet from morning to late night during the holy month. (as surveyed in the market )&ldquo;Our specialty ingredient is low gluten flour imported from Europe, before we opened our bakery we&rsquo;ve tested so many types of flours and weren&rsquo;t impressed with the results. Baking cakes with low gluten flour was a game changer for our cakes due to the low gluten content the flour gave us moist cakes that tasted delicious and have that perfect cake soft crumb consistency that was hardly available in the local market. We didn&rsquo;t want to take the easy road, many suppliers have tried convincing us to use ready cake mix but that would defeat the whole purpose of opening a bakery and we would not have been able to proudly state that our baked cakes and pastries were made from scratch.&rdquo;What are some of the biggest wedding cake trends you are seeing right now? Do you follow trends?&ldquo;We do follow trends and we try to add our own spin to some of the designs we see. We noticed that classical rococo era design are making a major comeback in cake design which is amazing because of the detailing work involved, such cake designs are timeless and elegant, we&rsquo;ve recently made a wedding cake that was inspired by classic floral rococo design but we&rsquo;ve added a little modern touch to it, the twist was using some floral moulds to shape the gum paste and then individually working on some of the flowers to give them a more realistic look and in addition to that a lot of the flowers were hand shaped from scratch which is time consuming but gave us the quality our customers expected.&rdquo;How far in advance should a couple order their wedding cake? How is the price of a wedding cake usually determined? What is your advise in terms of cost?&ldquo;We need at least 6 weeks notice to create the perfect cake. The price of a wedding cake is determined by the number of hours involved in making the cake both baking and decorating parts are considered in the process of pricing it. The current average in the market is Rials 25 per kg, which will cover the hours booked in making the cake, ingredients, hand labour involved in making a certain number of (flowers or any other shapes that would fall under the price mentioned). When a wedding cake order is confirmed we make sure that we book time to execute the cake professionally during which no other cake orders would be accepted, that also changes the kitchen operation as en entire working surface table would be booked for the wedding cake which effects the production of other bakery products but the lack of sales on the day are normally retained from each wedding cake order.&rdquo;How ambitious can a couple be in customising their cake? Do you recommend that they bring photos from a magazine or book?&ldquo;We do prefer seeing an inspiration photo as that would give us the ability to advice the customer on how the cake can be customised to suit the wedding theme and we take the time of the year into consideration when accepting orders as the weather here would make it practically impossible to make buttercream cakes during summer months.&rdquo;Do you advise the couple to sample the cake? &ldquo;We absolutely do and we quite enjoy hearing the feedback too. We also encourage our customers to advice us on cake flavours they would like to have for their wedding cake.&rdquo;Anything else you&rsquo;d like to add?&ldquo;The bakery will start offering monthly specials and coffee very soon we would love for people to visit us sip on coffee and try our freshly baked pastries and cakes.&rdquo;&nbsp;
