THE ORIGINAL VERSION

Is there anything more indulgent than a freshly baked cherry pie? We think not, but sadly that rich, buttery shortcrust pastry isn't diet-friendly.

WHAT WE DID

Swapping to phyllo pastry makes this pudding much lighter and less fattening. It’s just as delicious and the sweet, sticky cherries burst through in flavour without lots of added sugar.
