Fab, filling and nutritious, soups are hard to beat when you want to shed some flab,’ says nutritionist, author and fat-loss mentor Fiona Kirk (pictured, see ‘A few days focused on nourishing soups can result in pounds lost, hunger busted, energy enhanced and a steely determination to continue your weight loss journey.’


Long-stemmed Broccoli

Warm the oil from 75g sun-dried tomatoes in oil in a soup pot and gently sauté one medium, finely chopped onion until soft. Chop and add the sun-dried tomatoes, 2 crushed garlic cloves and a pinch of chilli powder, stir well and continue to sauté everything for a further 5 mins. Add 400g trimmed and chopped long-stem broccoli and 750ml chicken or veg stock and gently simmer for 10 mins or until the broccoli is tender. Use a hand blender to get a nice chunky consistency, adding more stock or boiling water if the soup is too thick. Stir in a handful of fresh parsley and a splash of lemon juice, season to taste, and serve topped with crispy bacon bits and/or toasted pine nuts.
