If there is one recipe that everyone should have perfected, it's the chicken roast. Pop it in the oven, and soon you'll be enjoying a warming, hearty dinner.

CLASSIC ROAST CHICKEN

PREP + COOK TIME 1½ HOURS SERVES 4-6

1.8kg whole chicken

¼ cup (60ml) extra virgin olive oil

2 cloves garlic, crushed

3 teaspoons dijon mustard

1 medium lemon (140g), rind grated finely

3 sprigs fresh flat-leaf parsley

3 sprigs fresh thyme
