Supercharged Burgers
The secret to this burger? An easy DIY carrot kimchi that's ready in no time!

THE SUPER BEEF BURGER

PREP + COOK TIME 35 MINUTES SERVES 4

¼ cup (60ml) extra virgin olive oil

2 medium onions (300g), sliced

4 cloves garlic, crushed 600g beef mince

1 medium onion (150g), extra, chopped finely

1 tablespoon dijon mustard

1 cup fresh flat−leaf parsley leaves, chopped

â…” cup (190g) kefir yoghurt or greek yoghurt 4 burger buns, toasted

1 cup (10g) mixed salad leaves Siracha or tomato sauce, to serve

CARROT KIMCHI

4 large carrots, peeled

180g daikon, peeled

2 green onions, coarsely chopped

1 tablespoon sea salt flakes

2 cups (500ml) filtered water

2 cloves garlic, crushed

2 teaspoons caster sugar
