The leftover meal is ground into a powder. Although hemp seed powder and marijuana come from the same plant, their similarities stop there.
Rather than being a mind-altering drug, hemp seed powder is a complete plant protein, which means it includes the nine essential amino acids our bodies need but cannot produce on their own. It has 20 amino acids in total, as well as omega-3 fatty acids. Per 30g serving, hemp seed powder has about 15g of protein and 7g of fibre. Its nutty, earthy flavour can be added to almost anything. Naturally gluten-free and vegan, it’s one of the easiest proteins to digest!
HEMP SEED TORTELLINI WITH LEMONY SPINACH AND RICOTTA
Serves 2 EASY 1 hr 30 mins
WHAT YOU NEED
PASTA DOUGH
120g (1 cup) almond flour
40g (½ cup) hemp seed powder (find at select health stores)
80g potato starch (find at select health stores)
44g (¼ cup) rice flour + extra, to dust (find at select supermarkets and health stores)
1 tsp xanthan gum (find at select health stores) pinch fine salt
4 large eggs, at room temperature 1 tbsp olive oil
FILLING
200g baby spinach, washed
300g ricotta cheese zest of 1 lemon
50g freshly grated Parmesan/Grana Padano + extra, to serve pinch ground nutmeg sea salt flakes, to taste
