Simple Pastry Work For Stunning Results This Christmas

Brookies

You no longer have to choose between two of the nation’s most popular bakes. Brookies are a double-layered treat combining a chewy chocolate chip cookie with a rich brownie. Sprinkle with a little sea salt if you like, then fill the cake tin for the festive season. Or cut into smaller squares and package them up with ribbon to give as gifts.

SERVES 12-16

PREP 20 mins plus 30 mins chilling and cooling

COOK 55 mins

EASY V

For the cookie layer

  • 120g unsalted butter softened, plus extra for the tin

  • 120g light brown soft sugar

  • 100g dark muscovado sugar

  • 1 large egg, plus 1 egg yolk

  • 250g plain flour

  • ½ tsp bicarbonate of soda

  • 50g milk chocolate chunks

For the brownie layer

  • 185g unsalted butter

  • 185g dark chocolate (at least

  • 70% cocoa solids)

  • 3 large eggs

  • 1 tsp vanilla extract

  • 275g golden caster sugar

  • 50g cocoa powder

  • 130g plain flour
