Garden leaves with smoked salmon & cheat’s blinis

Lettuce is the first thing a novice gardener should grow – it’s so easy. There are loads of different seed varieties, so mix up the types to add colour to your garden and flavour to your plate.

Serves 6

Prep 20 mins

Cook 10 mins

1 tbsp wholegrain mustard

1 tbsp red wine vinegar

3 tbsp olive oil

100g mixed garden leaves

200g smoked salmon

3 cooked beetroot, finely chopped

FOR THE BLINIS

100g plain flour

1 egg, separated

150ml milk

25g butter, melted bunch of chives, snipped sunflower oil, for cooking

1 For the blinis, tip the flour into a bowl and season. Make a well in the centre, then add the egg yolk and half the milk. Whisk until smooth, gradually add the rest of the milk, then the butter and chives. Whisk the egg whites until starting to stiffen, then fold into the batter. Lightly oil a frying pan, then sizzle spoonfuls of the mix for 2-3 mins on each side until golden. Keep warm.

2 Mix the mustard, vinegar and olive oil in a salad bowl. Add the salad leaves, then toss together. Serve the salad, salmon and blinis with the beetroot on the side. PER SERVING 240 kcals, fat 14g, saturates 4g, carbs 16g, sugars 3g, fibre 1g, protein 13g, salt 1.9g Slow-roasted shoulder of pork Slow cooking makes the shoulder’s toughness melt away, leaving you with lovely tender meat.
