For Dough:

2 3/4 cup bread flour

1 cup water

1 tablespoon dry yeast

1 tablespoon white sugar

1 teaspoon salt

1/2 cup rendered fat, COLD!

For Filling:

1/2 cup almond flour

3/4 cup powdered sugar

1 egg white

1 teaspoon almond extract

For Icing:

1/2 cup powdered sugar

1 tablespoon milk

1/2 teaspoon vanilla Sliced almonds for topping

Bear claws are a classic pastry; fluffy, flaky, sweet, and a solid almond filling. What isn’t so classic is bear fat in the recipe. Let me assure you, these belong in your hunting camp. Early morning perc coffee and one of these bad boys is sure to satisfy that morning sweet tooth.
