The creators behind a new star-studded charity cookbook have shared some of its recipes for you to try at home
RAINBOW RECIPES

The new Rainbow Charity Recipe Book for Bath is the brainchild of former city mayor Loraine Morgan-Brinkhurst MBE.

Having seen her friends and family sharing their culinary creations during lockdown, she decided to put together a recipe book for charity.

A former NHS worker of 25 years and Vice President of the Forever Friends Charity at Bath Royal United Hospital, Loraine set about collecting sponsors and was offered help from local designer Mark Norbury. At the time Somerset Life went to print she had sold more than 100 books in aid of Th Forever Friends Appeal, which is an ongoing charity that has also helped provide care packages, hot me and equipment to those in need during the pandemic.

Simon Shepherd Actor

During the lockdown, Simon has done his fair share of family cooking. One day he realized there were no oven chips in the freezer. He found this recipe corresponded to his pantry ingredients. He teamed it with a leek vinaigrette and roast beetroot salad. Big hit!

SIMON’S POLENTA CHIPS

Serves 6

Ingredients

• 500ml (2 cups) milk

• 500ml (2 cups) chicken stock

• 170g (1 cup) polenta

• 40g (1/2 cup) finely grated pecorino or parmesan (I use parmesan)

• 2tbsps chopped fresh sage

• Sunflower oil, for shallow frying

• Plain flour, to dust

Method

1. Lightly grease a 17 x 27cm pan with oil and line with baking paper.
