GRILLED BRINJAL AND BONITO

medium brinjals 4

teriyaki sauce 4 T

freshly squeezed lime juice 4 T

sesame oil 1 T

bonito flakes 1 T

1 Preheat the oven to 180°C. Place the brinjals directly on the oven racks. Bake for 45 minutes or until soft and wilted.

2 Cut the brinjals in half and drizzle with the teriyaki sauce, lime juice, and sesame oil. Sprinkle over the bonito flakes.

Cook’s note: Cook the brinjals in medium coals or over a gas flame, turning them until blackened and soft.

BBQ CHICKEN BALLS

Preparation: 15 minutes

Cooking: 10 minutes, plus 30 minutes’

standing time

chicken mince 300 g

ground Szechuan pepper 1 t

ground five-spice blend ½ t

oyster sauce 1 cup

Mix the mince and ground spices. Shape into ovals or rounds. Toss in the oyster sauce and fry or place on hot coals, turning until cooked through. Brush with more oyster sauce as you cook.

SOYA-PICKLED CUCUMBER

cucumber 1, finely sliced into small batons

rice wine vinegar 4 T

soya sauce 2 T

ginger 1 x 10 cm piece, peeled and grated

Mix all the ingredients and allow to stand for 30 minutes.

LETTUCE-AND-SESAME CHOPPED SALAD

Woolworths Crunchita lettuce 1, roughly chopped

sesame seeds 2 T, toasted

For the dressing, mix: good-quality mayonnaise 4 T

rice wine vinegar 3 T

tahini 2 T

Drizzle the dressing over the lettuce, then top with the toasted sesame seeds.

DHAL BOWL

ghee 1 T

curry leaves 10

garlic 2 t grated

ginger 2 t grated

fresh turmeric 1 t grated

curry paste 3 T

red chili 1, finely chopped

split red lentils 250 g

Woolworths fresh free-range chicken

stock 4 cups

salt, to taste

fresh coconut 100 g, grated

coriander 2 T, chopped

coconut cream 1 cup, for serving

rotis, for serving

1 Heat the ghee in a saucepan. Stir in the curry leaves, garlic, ginger, turmeric, curry paste, and chili. Cook for 1 minute, then stir through the lentils. 2 Add the stock and cook for 20–30 minutes. Season to taste. 3 Blend the fresh coconut and coriander. To serve, spoon the dhal into bowls, then pour over the coconut cream. Add a dollop of the coriander-and-coconut mixture.

RAINBOW YOGHURT

full-cream plain yoghurt 1 cup

salt, to taste

Woolworths jalapeño atchar 4 T

curry leaves 3 sprigs, fried

beetroot 1, grated

Season the yogurt. Spread onto a plate, spoon over the atchar, swirl in the beetroot and top with the crispy curry leaves. CARB-CONSCIOUS, MEAT-FREE, WHEATLAND GLUTEN-FREE

CAULIFLOWER KORMA

Serves 4

Preparation: 10 minutes

Cooking: 25 minutes

ghee 3 T

yellow curry paste 2 T

salt 2 t

whole cauliflower 1, quartered

coconut cream ½ cup

1 Preheat the oven to 160°C. 2 Heat the ghee in a heavy-based saucepan, add the curry paste and salt and cook for 2–3 minutes. Add the cauliflower and brown on both sides. 3 Place the cauliflower on a baking tray and bake until tender, about 10 minutes. 4 While the cauliflower is baking, deglaze the saucepan with the coconut cream and simmer for 5–10 minutes. 5 Serve the cauliflower with the curry coconut cream.

Cook’s note: While the cauliflower is browning, the paste might start burning slightly. Deglaze the pan with a little vegetable stock to prevent this.
