PORK SHOULDER ROAST

INGREDIENTS:

3 tablespoons olive oil

3 tablespoons chopped garlic

Salt and black pepper

5 pounds pork shoulder

DIRECTIONS:

Preheat the oven to 425 degrees. In a small bowl, mix together the olive oil, garlic, salt, and pepper. Spread the garlic mixture over the pork shoulder. Place meat onto a roasting pan and cook for 20 minutes. Reduce heat to 325 degrees and continue to cook for 4 hours. Remove the pork from the oven and let stand about 30 minutes before serving.

PORK & SWEET POTATO SOUP

INGREDIENTS:

1 tablespoon olive oil

1 medium onion, diced

3 clove garlic, smashed

2 tablespoons tomato paste

4 cups low-sodium chicken stock

2 cups water

1 (14.5-ounce) can diced tomatoes

2 medium sweet potatoes, 1-inch dice

1 teaspoon salt

½ teaspoon black pepper

2 pounds cooked pork, cubed
