Ardyn's-Butternut Squash Risotto
As the chefs and owners of popular NYC eatery Ardyn, Adam Bordonaro and Ryan Lory are known for creating fresh, seasonal fare, like the butternut squash risotto they share here.

“This is a great main or side for the holiday season,” they say of the delicious dish. “It’s warming, rich and flavorful, and the crispy rice adds an unexpected and enjoyable crunch.” Pass us a plate!


For risotto:

• 3 tbsp olive oil

• 1 medium Spanish onion, diced

• 1 1⁄2 cups Arborio rice

• 1⁄2 cup white wine

• 5 cups chicken stock

• 2 cups butternut squash puree

• 1 1⁄2 cups diced roasted butternut squash

• Salt to taste
