Satisfy your cravings with these almost-too-good-to-be-true desserts!

BERRY TRIFLES

INGREDIENTS

400g can skim condensed milk

3 cups skim milk

2 egg yolks

2 tsp powdered gelatine

1 tbsp sugar

1⁄2 tsp vanilla bean paste

300g frozen mixed berries, thawed

•250g packet sponge fingers

Mint leaves, to serve

METHOD

1 In a medium saucepan, whisk condensed milk, skim milk and yolks together. Stir over low heat until thickened enough to coat the back of a wooden spoon. Sprinkle gelatine on top and whisk to combine (do not boil). 2 In a small saucepan, combine sugar, vanilla and half berries. Stir over low heat until sugar dissolves and berries release some juices. Add remaining berries (see tip). 3 Place halved sponge finger in base of 6 large glasses. Dollop with half custard and spoon over half berries. Repeat layers. 4 Cover and chill 2 hours. Garnish with mint leaves.
