How did you plan a career in the food industry?
“While I was studying in London, my mother sent a picture of the yummiest salad that she ate at a restaurant in Mumbai and wrote, ‘Let’s open a restaurant?’ It was a salad with fresh ingredients, topped with roasted garlic in a simple dressing that saw the birth of Civil House, the restaurant we now run.
“For over a week, my mother and I recalled all our favorite dishes eaten at restaurants worldwide. While our mouth was watering thinking of each dish, we wanted to create a dining experience which our customers would want to come back for. I was sure the location had to be Khan Market. As a teenager, I wasn’t allowed to spend frequent late evenings out while all my friends would be at Khan – chilling. So I told my mother frivolously, ‘One day I will open my own business in Khan Market so you cannot stop me from going there any time of the day or night.’”
