Grapefruit Curd And Meringue Tart

Home-made curd is quick and easy to make, and so much tastier than the shop-bought variety. For this recipe, I used grapefruit juice instead of the traditional lemon juice. This is a wonderful recipe to have in your repertoire, and is almost certain to become a family favourite!

To make one grapefruit curd tart, you will need:

FOR THE PASTRY AND FILLING:

400g shortcrust pastry

180ml grapefruit juice 80ml castor sugar

6 egg yolks

120g butter, chopped

FOR THE MERINGUE:

4 egg whites

125ml castor sugar

1 Preheat the oven to 180°C. Grease a large, fluted tart tin, or six small 25cm fluted tart tins. Roll the pastry out on a floured surface to 5mm thick.
