Go 'yalla yalla' at Hyatt Trivandrum's Arabian gourmet fest

Along with familiar favourites, the fest offers several Middle Eastern dishes, including Quidra, Pide, and more

FROM the scent of saffron and cinnamon wafting through the air to the slow, smoky sizzle of meat on open flames, this Arabian gourmet fest at Hyatt Regency Trivandrum is a sensory journey across the Middle East.

Aptly titled 'Yalla, Let's Feast!', the grand fest has been crafted by chef Karthik Gunasekaran, who brings together classics from across the Arabian region.

Expect familiar favourites like velvety hummus, along with eggplant-based dip called baba ghanoush, walnut muhammara, and the refreshing zing of spinach tarator. The mezze alone could be a meal, but this is just the beginning.

"We are trying to bring together familiar dishes from across the Arab world — from Yemen, Oman, Saudi Arabia, Turkey, Syria, Egypt, and Jordan," says Karthik. "Each day, we serve around 10 to 15 dishes, and the menu changes daily. It's a rotation menu, so guests can experience something new every time they visit."
