QUINOA TEMPEH SALAD
Serves 1
1/4 cup quinoa
1 cup cubed tempeh
1 tsp. tamari
2 cups kale, de-stemmed and chopped
1/4 cucumber, diced
1/2 green bell pepper, seeded and diced
1/2 avocado, pitted and cubed
2 tbsp. capers
1 scallion, sliced
1 tbsp. sunflower seeds (optional)
1 tsp. kelp or nori flakes (optional)
1. Cook the quinoa according to package directions.
