We dedicate this issue, where we honor the Best of 2018, to all the cooks and chefs, from hole-in-the-wall carinderias to the toniest establishments-all of them, contributing to make our cherished childhood Pinoy favorites-into a global phenomenon.

I’ve never been a morning person, but I’ve always found a
way to enjoy a “breakfast” at any time of the day. At the
peak of my partying days, I’d fry up a Ma Ling-Silog – very
crispy Ma-Ling, then the egg cooked, edges of the sunnyside-
up crisped up in the same oil, and then finally the rice,
with chopped garlic, still in the same pan. It was a glorious
way to line my stomach in preparation for the libations
ahead.
Years later, in the era of “I.F.” or Intermittent Fasting, my
inconsistent attempts to stick to an 8-hour eating window
means a big breakfast after a 16-hour fast. So that would often
be Bacon Spam, cooked to a crisp, then the egg fried in the
…. well, some things really haven’t changed that much after
all for me.
However, in this issue, we introduce you to four of our
favorite all-day breakfast destinations, and in every one, the
glorious egg features prominently. As it should. After all,
nothing sparks joy more than a bright, sunny yolk, whatever
the time of the day.

We’re really looking forward to the next twelve months;
at the end of 2020, this magazine will just be a few
issues away from celebrating its centennial, and we
will make sure that we gather much momentum
towards that milestone.
You’re holding issue #82, and we’re more excited and
enthusiastic than ever. It’s amazing to imagine that we
launched Let’s Eat it seems, so long ago -- back in the
summer of 2013, and here we are, seven years on, your
monthly source of all the latest and the greatest in Metro
Manila’s dining scene. Thanks always for taking the time to
read this magazine. We are extremely grateful to all of you.
And for those of you who’ve kept and collected copies? We’re
sending you so much more love!
As such, expect even more in the year ahead. More
restaurants. More new delicious discoveries. More stories
about the wonderfully talented people in the F&B industry,

dichotomy; but in reference to the booming and ever thriving
Metro Manila restaurant scene, I can only spin it to a double

We all love Chinese Cuisine, certainly. But I’m not so
sure what the benefits of the influx of hundreds of
thousands, some say millions of Mainland Chinese,
really are. All of a sudden, they seem to be everywhere.
If it took the Korean Invasion a decade and a half to fully
assimilate into our day to day lives, it seems that our brand
new village and condo mates just popped up overnight,
bringing with them a whole new dimension to our daily
routines. I can always tell when a large enough group has
settled into a neighborhood: a new Chinese restaurant opens,
but one with no menus in Filipino or in English. I’d love to
try them, but honestly, I have no idea or comprehension of
what to order.
We should all be happy though, that many, many more
restaurants that offer the most delicious dimsum and the
most sublime seafood dishes, and the other Chinese Classics
that we love, continue to welcome us with stunning new
specialties.

Be a little more patient and be rewarded; you’ll find that the small-town charms of the Tagaytay we grew up with are still there. The one-of-a-kind family restaurants and real farm to table cuisine. It’s time to rediscover your favorite foggy foodie city…

Filipino Food, like the Filipinos themselves, will always be in motion. Forever on the move, always evolving. But wherever we will go, our food is our soul, and our souls will always rooted in our food. And that is what makes us truly Filipino.

I just received my bill from Meralco, and it’s the highest it’s
been in two years. I’m not certain if the electric company’s
raised its rates, or if I just lost track of my air conditioner
use, or perhaps, abuse is the better word, since it’s been
chugging along almost 24/7 this past month. It’s been a
sweltering summer after all, with heat indices reaching record
levels nationwide.
Times like this, the best thing to do, really, is to hibernate
in a cold room, chill with the latest on Netflix, and add
even more comfort in the form of a favorite food: a scoop
of ice cream, a slice of cake, cookies and milk. Sweet treats
reminiscent of lazy childhood summer days, guaranteed to
put a smile on anyone’s face, no matter how hot things get.
That’s what we hope to do for you with this special issue:
make you smile, and of course, make you crave. After all, this
magazine you’re reading is called . . .

Boracay is on everyone’s mind. I'm forever the optimist, and I'm praying that  by November, the sun will shine over the island once again, so I can return to have those calamansi muffins from Real Coffee. They’ve been my favorite breakfast there since 1996. 

Meanwhile, I’ll keep my heart singing and my belly smiling at two of the city’s best new breakfast-all-day joints. I suggest you visit them soon. Breakfast after all, is the most important meal of the day.

What Anthony Bourdain was to the Cable TV Era, David Chang is to the Age of Netflix: the most influential, the most popular, and the most highly regarded celebrity chefs on television. Both certainly have very similar qualities: extremely cocky, quite irreverent, strongly opinionated, and respectful of—but not bound to -- strict culinary traditions, and most of all, knowledgeable and credible. Both, with their intelligent and incisive interviews styles, not unlike that of David Letterman, are the two most charming and compelling conversationalists on screen. Recently, however, Bourdain seems to have become more of a curmudgeon and less of the Han Solo-like rogue he was during the first few seasons of “No Reservations”; his current programs seem to be too polished, too corporate. Chang, on the other hand, as seen on “Mind of a Chef”, and currently, on the food porn show on everyone’s queue, “Ugly Delicious”, is the brash, younger adventurer, the one true heir to the king.

Welcome to the very first out-of-town special of Let’s
Eat! It took almost five years, but we’ve finally found our
way to the province that’s regarded as one of the
culinary capitals of the Philippines: Pampanga. Personally,
since I’m a (very) proud Cabalen, I would have loved to
declare it as THE Culinary Capital of our country; but to
be completely objective and absolutely fair, there’s such an
abundance of diverse richness in our archipelago, that to
honor just one place would be a great disservice to Cavite,
Bacolod, Cebu, Cagayan de Oro, Davao… well, the list goes
on.
Pampanga’s popular reputation, and its proximity to
Manila, however, makes it the quickest, easiest, and most
convenient destination for a day-long food tour: all that’s
needed is a guide to some of its must visit restaurants. And
that’s what we hope this issue accomplishes: a handy and
helpful reference when you plan your own D-I-Y- food
trip to the cities of San Fernando and Angeles. We’re only
scratching the surface of course, the proverbial tip of the
culinary iceberg, since there are so many more delights and
delicacies to discover down in Masantol up to Mabalacat
and from Lubao to Candaba. Consider this as an appetizer, a teaser to all the feasts that await you in my home province…

Bias!!!”: often in all upper case letters, that word was one
of the most improbable and most overused comments
in Facebook posts this past year. Grammatical
considerations aside, it’s an indication of how social
media has given everyone a voice, and unfortunately, in some
cases, a bully pulpit. Most of the time, however, at least in
our good vibes world of food and drinks, biases are actually
a very good thing: a democratic vote if you will, that helps
us all determine which restaurants to prioritize and who to
patronize among the new food entrepreneurs. It’s all about
personal preferences, true, but often, a consensus can be
reached.
This special New Year’s issue is all about that. What
we agree are our favorites, the best of the year just ended.
You may or may not be familiar with our choices, but we
guarantee that you’ll most likely love them as much as we do.
We look forward, and are giddy, with what we’ll be sharing
with you in 2018.

There really is nothing like Christmas in the Philippines.

It's the longest in the world, and it's never complete without lots of loved ones around, matched by an almost absurd abundance of food; after all, we Filipinos celebrate Christmas around the dining table.

 In this special issue, we feature three of our favorite restaurants, all with great food and yes, great booze -- the better to make merry with family and friends. Just after Christmas in 2014, a tiny bar, Tambai, opened right across El Chupacabra, which was already drawing the more adventurous types to one of Makati’s oldest districts, Poblacion. Quaint and one-of-a-kind, both of the hole-in-the-wall joints were located a stone’s throw away from a dodgy red-light area… somehow, it felt just like Malate in the early 1990s. History was repeating itself. A powder keg had been lit. The neighborhood exploded, overnight, with dozens of distinct new bars and quirky restaurants opening in rapid succession. And when the smoke cleared, Poblacion had become the New Malate.

The hottest topic in dinner parties these days is “Keto”,
the diet du jour, the hip new way to lose weight. It’s
essentially a cool new name for an old, tried and true
system: a very low carb diet that in theory, optimizes
the body into a fat-burning machine. There’s a lot of science
involved, and there are a lot of stories --- your social media
feeds are likely full of testimonials from your friends --- who
are suffering for their slimness.
But let’s admit it, too many tales of passive aggressive selfaggrandizing success stories can be overwhelming, and often, just plain annoying. Sometimes, we just need to let go and let good vibes take over. Good vibes, in the case of this magazine, will inevitably involve divine new dishes, both savory and sweet. So consider this the relief you seek from too much
information about ketogenics and ketones.
Welcome to our throw caution to the wind and dive
headfirst into guilty pleasures issue. Resistance is futile.
